I love fried rice, but there are so few good chinese restaurants in our area. Even if the food is good, the rice is less than spectacular. I have recently decided that I am quite capable of making my own fried rice that has all of the elements that I believe a good fried rice requires. It does take a little bit of time, but it is definately worth the effort.
3 cups steamed rice
4 tbls butter
2 eggs
1 cup frozen mixed vegetables
1/2 small onion, diced
1 tsp ginger paste
1/2 tsp sesame oil
3 tbls soy sauce
1/2 tsp salt
1/4 tsp ground pepper
Melt butter in large non-stick skillet over medium-high heat. Add onions and salt, saute until soft and transluescent. Meanwhile combine sesame oil, soy sauce, and ginger paste in small bowl. Add eggs to pan and scramble. Add rice, mixed vegetable, sauce, and pepper. Stir until well combined and continue to fry until the rice is cooked to your liking.
